Gluten, dairy, egg free peanut butter treats...

A friend of mine told me about these fabulous allergy friendly treats! She made them for me one day and left a container of them on my doorstep with the recipe attached. How sweet is that?!!
I made these today and they are oh so good . Here is the recipe for you!


Peanut butter treats

1 cup chocolate chips
2 cups uncooked quick oats
1/2 cup agave nectar or honey
1 cup peanut butter 
1 cup ground flax seed
2 tsp vanilla

Roll into balls and refrigerate for 30 min before serving. 

Delicious!

Three new gluten, dairy,egg free recipes.......

Happy Monday to all! Well I'll tell ya this....after bragging about being somewhat fit, I took two tylenol gel caps before bed that day!:):) So much for being fit..HA!!


Here are some recent gluten free recipes. For more recipes just look around in the sidebar or the page up top of this blog.

This here is my favorite new recipe. Who can resist a yummy,chewy cookie?



Coconut chip cookies

1/3 cup coconut oil
1/2 cup sugar
1/4 cup brown sugar
3 tbs water
1/2 tsp vanilla
1 cup shredded unsweetened coconut
1/2 cup Namaste flour mix or homemade gluten free flour mix
(If you use homemade then add 1/4 tsp xanthan gum)
1/2 tsp baking soda
1 cup dairy free chocolate chips

6 min 350F. Chill before serving!




Apple crisp

5 large apple peeled and sliced
Spread the apples in a greased 8x8 pan and sprinkle with cinnamon

Sprinkle on top a mixture of:
1/3 cup coconut oil
1/2 cup brown sugar
1/2 cup namaste flour mic OR homemade gluten free flour mix with 1/2 tsp xanthan gum
1 cup quick oats
1/2 tsp baking soda

Bake covered for about 30 minutes in a 350F oven.




Corn bread

1/3 cup thick apple sauce
1 cup rice milk
1/4 cup oil
1 cup cornmeal
1 cup namaste flour mix or homemade flour mix with 1/2 tsp xanthan gum
1/4 cup sugar
1/4 tsp salt
3 tsp baking powder

350F about 20 min

gluten free baking video

Below is a little video I made earlier of some gluten free cookie baking:) It's not professional but it was fun to make and hopefully somewhat informative to all you fellow gluten free bakers as well:)

I made some changes to the recipe (as mentioned in the video) so the recipe typed up below the video reflects that.








Gluten, dairy, egg free oatmeal raisin cookies


2 tbs coconut oil


1/2 cup brown sugar


1/2 tsp vanilla


2 1/2 tbs water


1/2 cup brown rice brown flour mix


1/2 cup GF quick oats


1/2 tsp baking soda


1/2 tsp cinnamon


1/4 tsp xanthan gum


pinch of salt


1/3 cup raisins (can substitute with dairy free chocolate chips)



Today is Monday...catch up day so I'm off to declutter and organize the house and ctach up on things around here!!! Monday always seem to require that after a busy weekend:)

gluten free cookie recipe

I made myself a lovely batch of coconut delight...the gluten free version:) So so yummy!!
Gluten, dairy, egg free coconut delight


1/4 cup coconut oil

1/4 cup pure cocoa powder

1/4 cup rice milk


Bring the above to a boil


Remove form heat and mix in:



1/2 cup agave nectar OR 3/4 cup sugar

1/2 tsp vanilla extract

1/2 cup unsweetened coconut

1 1/2 cups gluten free quick oats



Drop by the tablespoon on a greased tray or cookie sheet and chill in the freezer:) You can serve these up straight from the freezer...they are actually best that way!

Gluten Dairy Egg free peanut butter chocolate chip cookies


1/4 cup coconut oil


1 tbs oil


3/4 cup sugar


1/2 cup chunky peanut butter


2 tbs water


1 tsp vanilla


1 cup brown rice flour mix (recipe for mix in the sidebar)


1/4 tsp baking soda


1/2 tsp xanthan gum


dairy free chocolate chips





(the picture does not chow chocolate chips because I ran out but it is very yum WITH chocolate chips!)

a converted recipe!

I tried a new recipe the other day found at the American homemaker and I really liked it. I liked it enough and my kids liked it enough that I converted the recipe to gluten and dairy free for myself!

(this picture is not the greatest! There are actually several cookies in the bowl but it looks like one giant mish mash...I promise it looks more appetizing in real life:):)

In a pan melt and bring to a boil:

1/4 cup coconut oil
1 cup sugar
1/4 cup rice milk

remove from heat then stir in until melted and smooth:

1/2 cup peanut butter

stir well and add:

1 3/4 cup gluten free quick oats

Mix well then drop by the tablespoon onto a wax paper lined tray or cookie sheet. Allow to cool completely before serving.

These fluffy  muffins are gluten free, dairy free  and not overly sweet. The pecans on the top add a nice crunch.  You could also just omit ...
