bragging about being somewhat fit, I took two
tylenol gel caps before bed that day!:):) So much for being fit..HA!!
Here are some recent gluten free recipes. For more recipes just look around in the sidebar or the page up top of this blog.
This here is my favorite new recipe. Who can resist a yummy,chewy cookie?
Coconut chip cookies1/3 cup coconut oil
1/2 cup sugar
1/4 cup brown sugar
3 tbs water
1/2 tsp vanilla
1 cup shredded unsweetened coconut
1/2 cup Namaste flour mix or
homemade gluten free flour mix(
If you use homemade then add 1/4 tsp xanthan gum)
1/2 tsp baking soda
1 cup dairy free chocolate chips
6 min 350F. Chill before serving!
Apple crisp5 large apple peeled and sliced
Spread the apples in a greased 8x8 pan and sprinkle with cinnamon
Sprinkle on top a mixture of:
1/3 cup coconut oil
1/2 cup brown sugar
1/2 cup namaste flour mic OR
homemade gluten free flour mix with 1/2 tsp xanthan gum
1 cup quick oats
1/2 tsp baking soda
Bake covered for about 30 minutes in a 350F oven.
Corn bread1/3 cup thick apple sauce
1 cup rice milk
1/4 cup oil
1 cup cornmeal
1 cup namaste flour mix or
homemade flour mix with 1/2 tsp xanthan gum
1/4 cup sugar
1/4 tsp salt
3 tsp baking powder
350F about 20 min
