~Banana chocolate chip muffins~

Banana chocolate chip muffins

~2 eggs
~1 cup melted margarine
~6 mashed bananas
~1 1/2 cup white sugar
~3 cups flour
~2 tsp baking powder
~1 tsp baking soda
~2 cups chocolate chips

~Scrumptuous blueberry muffins~



A while ago I was supposed to send a snack to a fundraiser that our church was working on. They like to have a snack during break time. Well guess when I remembered that I needed to bake??????????? At 10 pm!!!!
I made blueberry muffins for 3 reasons:)
1. they are quick
2. they are cheap to make
3. they are good and they are filling:)
I ran out of muffin cups so some of the batter was poured into a 9x13 pan and we ate that one for breakfast:)


Blueberry Muffins

~2 eggs

~1 1/2 cups sugar

~1 tbs vanilla

~2 cups oil

~2 1/4 cups milk

~3 1/2 cups flour

~1 tbs baking powder

~1 tsp baking soda

~2 cups frozen blueberries

Mix the blueberries in at the end:) scoop into muffin cups (3/4 full). Bake about 17 minutes at 350F

Fluffy bran muffins~great for breakfast!

Topped with a little cream cheese and with a banana on the side!


This is seriously the fluffiest breakfast muffin I've ever made. I got the recipe from the back of a package wheat bran and I'm so glad I saved it because it hasn't been printed on the package since! My husband really liked this so I I thought I'd pass the recipe on........


Classic Bran Muffins

1 1/2 cups wheat bran

1 1/2 cups milk

1 tsp lemon juice

1/2 cup oil

Measure out the milk and mix in the lemon juice. Then add the bran and oil and mix together and set aside to soak while you mix up the rest of the ingredients (below) in a separate bowl.

1 egg

2/3 cup brown sugar

1/2 tsp vanilla

1 cup flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

3/4 cup raisins or dates

Bake to perfection(about 15 minutes at 350F)

Double chocolate muffins

This is a nice and moist, extra chocolaty muffin. Great for a snack or in the lunchbox.





Double chocolate muffins


                                                       2 eggs

1 1/2 cups sugar


1 tb vanilla


2 cups oil


2 1/2 cups milk


3 1/2 cups flour


1/2 cup dark cocoa


1 tbs baking powder


1 tsp baking soda


2 cups chocolate chips






350F about 20 min. Makes about 35 large muffins

~Pumpkin muffins~

Since it's fall and fall means pretty leaves, fresh cool air, apples and PUMPKINS....I thought it was fitting to post this fun recipe. I made last fall and I remember them to be light and fluffy and oh so yummy.

1 egg

1/3 c butter or margarine

3/4 c sugar

1 1/2 c cooked mashed pumpkin

1/2 tsp salt (if using unsalted butter or margarine)
1 1/2 c flour
1 tsp baking soda
1 tsp baking powder

1/4 tsp nutmeg

1 tsp cinnamon

after you have the dough in the muffin forms mix 1 tsp with 2 tsp sugar and sprinkle on top before baking. Bake at 350 for about 15-20 minutes. It was a big hit at our house!
