This morning's recipe:
Here is my recipe for homemade cream of broccoli soup! We love this soup!! No one complains when I make this.....not even my little ones!!
This soup is creamy and nice and mild in flavour. Serve it with a couple of slices of cheddar cheese and cheese biscuits. Yum!
Ingredients:
~1kg bag of frozen broccoli florets or fresh chopped broccoli florets
~water just enough to almost but not completely cover the broccoli in the pot
~2 tbs vegeta (vegetable seasoning mix)
~2 cups milk
~1 cup flour
Method:
bring broccoli, water and seasoning to a boil. Reduce heat and simmer covered until broccoli is very tender. Take a potato masher and mash up the cooked broccoli in the water until there aren't any big clumps left. In an empty jar of any kind that has a lid, place your flour and milk. Give it a real good shake until the milk and flour is blended and smooth. Slowly and constantly stirring add the flour/milk mixture to your pot of broccoli. Stir and bring to a boil. Reduce heat and simmer until desired thickness is attained. you may adjust the thickness of the soup by adding a little more milk if desired. Serve hot!! Enjoy.

OH YUM!!! I might have to give this a try soon. LOVE broccoli. I'd probably throw in some cheese too LOL
