A delicious, filling soup on a cold wintry day!
Ingredients:
~1 pkg bacon cut into small pieces
~3/4 cup flour
~1 onion finely diced
~3 large potatoes diced
~3 cups corn
~5 cups milk
~2 cups water OR chicken broth(recommend the broth if you are not using vegeta. I used water and vegeta)
~2 tbs vegeta
~1 tsp garlic powder
~1 tsp pepper
~3/4 tbs parsley
~pinch of thyme
~salt to taste (if using vegeta you may not need salt. I didn't use any as vegeta is salty)
Method:
Fry your bacon in a large nonstick pot and when the bacon is almost done add the onions and fry until bacon is nice and crispy. Next mix in the flour an add the milk slowly and blending well. Next add all the other ingredients and mix well. Bring to a boil careful not to burn the bottom. Once boiling reduce the heat and simmer covered and often giving it all a good stir until the potatoes and corn are nice and tender. Serve with fresh bread if desired. Enjoy!
