Blender pancakes that are also vegan if that’s what you’re looking for :)

I bring you our breakfast from this morning:) This is a gluten free, dairy free and egg free pancake. If you have food allergies or you are vegan, this is perfect or you! I'm not vegan but do have food allergies and have to keep my gluten, dairy and egg intake way down otherwise I don't feel well. True story..a few months ago I was going overboard with NOT watching what I eat and ended up in the hospital. So there you go:)

Blender pancakes

3 cups unsweetened coconut milk
3 cups quick oats
3 slightly overripe bananas
3 tsp baking powder
1 tsp baking soda
handful of pecans
1 cup frozen blueberries

Place all the ingredients except the pecans and blueberries into a blender and blend until smooth (ish). Then add the pecans and blend just enough to break up the pecans but not to the point where they become liquid:) Next stir in the blueberries and DO NOT blend.
Use a 1/8 cup measuring cup to drop the batter onto a hot, buttered pan. You can use coconut oil for this is you're a vegan. I used butter because I'm willing to allow that much dairy in my diet and i like the taste with pancakes:)

When you flip them...be more gentle and careful than you would with regular pancakes...they are a bit more fragile.
Enjoy!

My cooking blog is a hobby for me and plus my kids use it. I'm not interested in making it look professional:) My pics are with my phone and not staged.

Serve with a pat of butter and some aunt Jemima :)

YUM!

Gluten/dairy/sugar free oats

Oatmeal is naturally gluten free but is normally contaminated because it is processed in the same processing plant as wheat. I did however find oats at the health food store that is processed in a special processing plant used only for gluten free grains.
Here is how I make my gluten free/dairy free/sugar free oats.
I cook up some GF rolled oats according to the directions on the package. Then while it is still hot I add some frozen blueberries ad let it sit a little bit until the berries thaw in the hot oats. The blueberries add natural sweetness! Then I mix in chopped apples and some apple sauce. The apple sauce is the secret!! It makes the oats tasty and moist without the addition of cream or milk. Sprinkle with cinnamon and there you have a nourishing meal that is completely gluten free and still tastes just as good!!:)
for EXTRA sweetness you can drizzle on a bit of agave...however I don't think this is necessary unless you have a real sweet tooth!

gluten dairy egg free pancakes

I'm sitting here by the computer for a short while as my babies finish their breakfast in their highchairs. they are munching on sausage pieces and oranges:) I felt like this was a good time to post one of my own breakfast foods:) hopefully someone out there can use it:) Pancakes:
1/2 cup brown rice flour
1/4 tsp sea salt
1/2 tsp gluten/aluminum free baking powder
sprinkle of cinnamon
1/3 cup apple sauce
1 tbs light tasting olive oil
1/4 cup rice milk
1/4 tsp pure vanilla

Prepare as you would any other pancake recipe:)

For variation try adding:
1/4 cup quick cooking gluten free certified oats (health food store!)
1/2 cup frozen blueberries

For homemade syrup:) (no additives and weird ingredients and also no dairy!)
1/4 cup brown sugar
1 tbs rice milk
bring to a bubbly boil and pour over pancakes.

Green smoothies

Green smoothies seem to be popular all over the Internet. I read about people drinking it, almost sounding like they drink it to feel less guilty about all the unhealthy food they consume the rest of the day:):):) It's all the rage!! HA HA!

I must say though that there is something to this whole green smoothie thing:) I have a particular little one who runs to the blender when she hears it turn on and cries by my feet until the sippy cup full of green goo is placed into her chubby little hands. And I couldn't be happier!!! I mean what parent doesn't like to see her little child chug down a cup full of fresh, ready to be absorbed vitamins and minerals? We call it "youth in a cup":):) If nothing else...at least I don't have to feel guilty about not getting enough greens:) I often tell the kids that the best part of green smoothies is that you eat all your greens and don't even know it!:):)

Here is how I make mine. I've settled into this recipe and have been making it this way for a long time with great success. This "recipe" is baby, toddler, preschool, child, teen aged and adult approved!!

I start by placing about 6 frozen strawberries into the bottom of the blender. Then I take two BIG handfuls of baby spinach and stuff it in. Next I peel 3 ripe bananas and place those on top of the spinach. Next comes some fresh, cold water. The amount depends on how thick you like your smoothie. I like ours to be drinkable but not runny.

Put on the lid and press the "ice crush" button. Once the frozen strawberries are crushed I press "liquefy" and let the blender run until the smoothie turns a nice "spring green"

And yes i have a cheepo blender but it works just fine!:)

A huge glass of this and I'm done breakfast!! Filling, nutritious and refreshing!

TRY IT!!
