Pumpkin pie

I just realized this morning that I have never put up my pumpkin pie recipe! I have two delicious pumpkin pies in the oven as I type this:)
HAPPY THANKS GIVING to all fellow Canadians out there :)

This recipe yields 2 pies

Pumpkin pie:

Ingredients:

- 4 eggs
- 1 cup brown sugar
- 1 tsp salt
- 1 tsp nutmeg
- 1 tbsp cinnamon
- 1 tsp allspice
- 2 tsp freshly grated ginger root or 1tsp ginger powder
- zest of one lemon (optional but VERY good!)
- 1/4 cup melted butter
- 4 small cans puréed pumpkin or 2 large cans
- 2 pie crusts

Method:
Use your kitchen aid mixer if you have one or a whisk to blend everything together nicely starting with the eggs and sugar then adding the rest.
Pour into two unbaked pie crusts and bake at 400 for 20 min then at 350 for 45 minutes more . Do keep checking on your pies as ovens tend to differ in their performance. I’ve had an oven before that I swear was hotter than the temperature I set it at. I’ve also had an oven that seemed way cooler on the exact same temperature setting!
Bake until an inserted toothpick comes out clean. Do not over bake  though... the filling does firm up some more as it cools!
Serve with whipped cream and a smile:)
Enjoy!

Blueberry pie

For the crust I used a wonderful recipe from Julie's recipes found HERE. It's a roll out crust recipe and the bread machine works great for mixing up the dough!!!
For the filling I used:

Blueberry pie filling:

~6 cups blueberries

~2 cups sugar

~3/4 cup flour

Roll the dough a little bigger than your pie pan for good results!

Don't forget to prick with a fork!
Bake at 350F covered with tin foil for about 20 minutes. Then finish baking uncovered.
Serve warm with whipped cream.

YUM!!! Wouldn't you agree???

Raspberry apple pie

I had some raspberries and apples on hand so I made raspberry apple pie. I used previously frozen berries so they were quite juicy when thawed.

Raspberry Apple pie filling (fills 2 pies)

Ingredients:

~3 cups thawed raspberries
~3 chopped apples
~1 tsp vanilla
~1 1/2 cups sugar
~3/4 cup flour

Method:

Mix all ingredients and pour into 2 prepared pie shells. Top with lattice top and bake covered in tin foil until fruit is soft then uncovered until it looks done:) Very simple:)

Picture below: the filling

Pies waiting for their lattice tops

The finished product. I did what Julie recommends which is to brush the pastry with a light coat of milk and sprinkle with sugar before baking. That was a real nice touch.

Mmmmmmmmmmmmmm!! Do you want some with whipping cream???

Banana cream pie

Well almost.....I did use store bought crusts......but the filling.....oh the filling is delicious and a great way to use milk:)!!!!!!

Banana Cream Pie
Ingredients:
~3 cups milk
~4 eggs separated
~3/4 cup milk
~1 tsp vanilla
~1 cup sugar
~3/4 cup flour
~2 sliced bananas (plus more for decorating)
~coconut for decorating
~2 baked pie shells
~dash of icing sugar (optional)
~1tbs cornstarch (optional)

Method:
Bring 3 cups of milk to a boil in a nonstick pan. In the meantime sperate the eggs and beat the yolks until fluffy. Then add the 3/4 cup milk, vanilla, sugar and flour. Beat well and slowly pour into the boiling milk stirring constantly. Cook on medium low for a few minutes until desired thickness is achieved (it will thicken a bit more as it cools off). Remove from heat and stir in the sliced bananas and pour into prebaked pie shells. Beat the egg whites with a dash of icing sugar and and a tbs of cornstarch until stiff and spread over pies. Bake until golden in color. OR save the egg white for something else and spread thickly with whipped cream. Garnish with sliced bananas and sprinkle with coconut! YUM!!

I had little chef do the banana slicing!!

This is seriously yummy!!!!!!!!!!
