Today's recipe is something for a drafty, cold day...possibly some snow later today? Hmmmm we shall see!
Most of my kids liked it including most of the picky eaters too!!! Needless to say I'm exited about this:)
Creamy black bean chili
1 pound lean ground beef
2 cups black beans soaked over night and drained
2 cups chic peas soaked over night and drained
1 large onion diced
6 tomatoes diced
3 large red peppers diced
1 1/2 tbs oregano
2 tbs paprika
1 packet chili seasoning
salt, pepper, garlic powder to taste
1/2 cup flour
2 cups milk
Brown ground beef and do NOT drain. Add all the veggies and spices and just enough water to cover everything. Bring to a boil then reduce heat and simmer covered until beans are tender (stir every once in a while) In a wide mouthed jar with a lid (I use a clean peanut butter jar!) put the flour and milk and put the lid on. Give it a good shake and slowly add to the chili stirring constantly. Bring to a boil and simmer (while stirring) until desired thickness. Serve over mashed potatoes, rice, macaroni etc.
For a gluten free version~I just took some out for myself BEFORE adding the flour/milk thickener:) Easy and nutritious! Enjoy!
