Can of black beans
Can of lentils (I used lentils I had cooked from friend lentils for another recipe )
Onions, carrots, beats, turnips, red bell peppers, celery - diced
Garlic cloves- diced
Vegetable broth (liter)
Water as much as you think u need:)
Dried parsley (to taste)
Vegeta seasoning (to taste) I used about 5 tablespoons for a pot.
Paprika (to taste)
A few potatoes cooked seperate and set aside
Cook the potatoes seperate, run through your blender with some of the cooking liquid. It should be a thick gravy consistency. Set aside
Cook everything else in a pot until veggies are tender. Add the potato blend to the soup and mix well. Serve:)
This is so so easy and you can use whatever veggie combo you think sounds yummy together. This combo was good and is nutritious . If you are vegan it's important you include legumes in your diet to keep your protein up! The potato blend adds not only extra nutrition but gives the soup a thicker, hardy consistecy and taste.
