I fiddled around with an egg/dairy containing gluten free recipe in a cookbook that I like and came up with a very delicious muffin that I can have with my multiple allergies!!
I'm very exited to bring you this delicious, moist and fluffy treat! Actually...it's made with brown rice flour so it's good for breakfast too!
Apple cinnamon muffins
1 cup brown rice flour mix
1/3 cup brown sugar
1/2 tbs gluten/aluminum free baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
pinch of sea salt
1 tsp cinnamon
1 large apple peeled and chopped
1/3 cup chopped walnuts
1/4 cup rice milk
1/4 cup oil
2/3 cup apple sauce
Start with the apple sauce then add all the other wet ingredients mixing after each addition. Mix your dry ingredients together in a separate bowl then add to the mixed wet ingredients. Fill muffin cups and bake at 375 for about 15 minutes depending on your oven:) remove the paper cup filled muffins from the mold pan and allow to cool at least half way on wire racks before digging in:) Makes about 8 muffins.
My sweet little taste tester said "Mmmmm it's good mom!"
So there you have it...ENJOY..all you gluten free people! There is hope that you can actually have fun eating!
