I got this mix out of a gluten free cookbook. It simplifies gluten free baking because you do not need to mix so many flours when baking...
Brown rice flour mix
6 cups brown rice flour
3 cups potato starch (not flour)
1 1/2 cups tapioca flour
I mix up a batch of this and keep it in an airtight plastic container in the fridge to use in pretty much all of my gluten free baking. It works really well!! Note: I now add 1 extra cup of potato starch and 1/2 cup extra tapioca flour for a lighter tasting mix! The recipe in the red letters now reflect this change!
