gluten dairy egg free blueberry muffins





These are scrumptious, fluffy, full of flavour and best of all YOU CANNOT TELL THEY ARE GLUTEN FREE!!!

This recipe makes 6~ perfect amount just for me to munch on throughout the day.

Gluten, dairy, egg free blueberry muffins

1/3 cup thick, unsweetened apple sauce
1/4 cup oil
1/4 cup rice milk
1/4 cup agave nectar or honey
1/4 tsp real vanilla
1 cup brown rice flour mix
1/2 tbs gluten/aluminum free baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
pinch of salt
grated rind of 1 medium sized lemon
3/4 cup frozen blueberries

Bake about 25 minutes in a 350F oven.

I haven't tried any yet because I need to get to the store and get some of these ingredients!:) Blueberry muffins are one of my favorite things though, so I will be sure to try these as soon as I pick up some rice flour.

What is xanthan gum? Can I buy that at a normal grocery store, or do I need to go to a health food store to get that?!?

Here is the definition for xanthan gum:
"A natural gum of high molecular weight produced by culture fermentation of glucose and used as a stabilizer in commercial food preparation."

I get mine at the health food store but also other stores that carry a variety of flours have them in my area. A little goes a long way!

Hi! I linked here from Mega Family Bloggers! I have 7 kids and am also gluten-intolerant! I was surprised to see so many recipes but I can't wait to try these muffins in the morning! I have been on a blueberry kick since they have been on sale lately! I did a blueberry/banana cake last night using coconut flour and agave, but I can have eggs and dairy (thankfully!).
