Gluten- dairy -egg free mini doughnuts



These were a good treat to make...though I would like to try them sugar free. Until then here is the sugar filled version:)

Mini doughnuts (Tim bits)

1/3 cup thick apple sauce
1 tbs olive oil
1/2 tsp real vanilla
1/4 cup rice milk
1 cup brown rice flour mix
1/2 cup sugar
1/4 tsp xanthan gum
2 tbs pure cocoa powder
1/2 tsp baking soda

Mix well starting with your wet ingredients then drop by the tablespoon into deep,hot oil. Fry turning once. place on paper towel lined plate to drain off the oil. Roll in icing sugar.

can't we do without this:xanthan gum...???

I heard you can replace with guar gum though not sure the amount. Xanthan holds the dough together much like gluten would.

Thank you so much for posting your GF recipes. My DD8 has recentltly been diagnosed as needing dietary changes to include gluten free and dairy free. I so much appreciate all the tried and true recipes out there...especially ones that are also dairy free, not all are!
