gluten dairy egg free~ strawberry walnut bread

This is a very flavourful,moist loaf that tastes great with peanut butter on top!


Strawberry walnut bread
2 cups brown rice flour mix
1/3 cup sugar
1 tbs baking powder
1 tsp baking soda
3/4 tsp xanthan gum
pinch of salt
1 cup rice milk
1/3 cup oil
1/3 cup apple sauce
3/4 tsp vanilla
2 handfuls of walnuts
6 fresh, plump strawberries chopped
Bake at 350F for about 25 minutes then covered with aluminum foil for an additional 10-15 minutes or more...test with toothpick for doneness:). note: if you insert your toothpick right by a piece of strawberry it will always come out too moist so test for doneness:) in the dough part:) Enjoy! this was very yummy!! My kids begged me for some:)

Just to clarify, when you use "brown rice flour mix", is that a prepackaged flour mix, your own mix with other flours, or just brown rice flour?
