I call these California muffins because of the sunshiny oranges in them:)

Also it's worth noting that these muffins are sugar free!!! That's always a bonus right?!
California muffins
Ingredients:
1/3 cup thick unsweetened apple sauce
1/4 cup oil
1/4 cup freshly squeezed orange juice
1/4 cup agave nectar
1/4 tsp gluten free vanilla
1/2 cup brown rice flour mix
1/2 cup gluten free oat flour
1/2 tbs gluten/aluminum free baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
pinch of salt
finely grated rind of one orange
1/4 cup walnut crumbs (optional)
1/4 cup raisins (optional)
Mix as you would any other muffin batter. Fold in rind, walnuts and raisins at the end. do not over mix!! Bake at 350F for about 20 minutes. Makes 6 large and delicious muffins.
