Lazy daisy cake

It's a fine Saturday today:) I have lots to do as usual as I prepare for Caleb's birthday dinner tonight...he will have 6 friends over and we'll have pop and pizza and chips and cake and ice cream....typical teen food:):):) Oh the oven is beeping...time to get the cake out of the oven!

It's lazy daisy cake!!!

A delicious sponge cake with Carmel coconut topping...yum yum!


I found this recipe in a "company's coming" cookbook but the original recipe makes a mere 8x8 pan so this recipe reflects the changes to make a 9x13 pan. It's really yummy though so I'm glad to have found this recipe! I just wish their recipes would make more at a time!


Lazy Daisy Cake

4 eggs
1 3/4 cups sugar
1 cup milk
2 tbs margarine
2 tsp vanilla
2 cups flour
2 tsp baking powder
topping:
1/4 cup margarine
1 1/4 cups brown sugar
1/2 cup milk
1 1/2 cups coconut
Mix the batter, bake the cake:) (about 15-20 minutes or so at 350F)
In a sauce pan melt the ingredients for the topping and spread over freshly baked cake. Cool completely before serving!!
Not the cheapest cake to make but every once in a while it's OK to splurge:)
I love to bake and it helps that everyone else in my family likes to eat it (so I'm not eating it!)

The kids often take some goodies in their lunches to school.

It looks positively delicious!! What kind of sandwiches are those? It looks like tomato peeking out...do the sandwiches ever get soggy?

Thin tomatoes between two pieces of lettuce is good to keep it drier. I think those were meat and cheese and lettuce, tomotoes, butter and mayo...if i remember correctly.
