Gluten free pizza crust and sauce

I was making the family homemade pizza the other night and wanted some myself. So I whipped up this gluten free version for myself and enjoyed every bite! I ate the left overs for breakfast the next morning:)


Gluten free pizza crust
1 tbs sweet rice flour
1/8 cup cornmeal
1/4 tsp salt
1/2 tsp xanthan gum
1/2 tsp baking powder
1/3 cup warm water
1/8 cup oil
No rising required:)




Form it into a personal size pizza by pressing into a small round pan and forming the round "crust" with your fingers. I used a small cake pan...about 7 inches around. Put on your toppings and bake at 350F for about 15-20 min. Leftovers can be wrapped in plastic wrap in a double layer to keep freshness and refrigerated.

As you can see I used no cheese...but if I wasn't allergic to dairy I would have piled it on...you can be sure of that! The picture is tooooooo bright and you cannot see the crust...but it's there:)

Now here is the instant sauce I used:)

Simple pizza sauce

1/4 cup crushed tomatoes

pinch of salt and pepper (and garlic if you can eat that)

1/2 tsp oregano

Mix and spread on pizza crust
