crescent shaped rolls

While on the topic of rolls:) I thought I'd show a pic of how pretty rolls look when made into a crescent shape.

In fact my 2 year old took one to bed with her last time I made these:).....very good sign! I like this because it's quicker than most dinner rolls......which is a huge bonus when you're strapped for time and you don't feel like packing up the entire heard of wild horses...I mean kids:)....to go to the store:)

Fancy dinner rolls

1/2 cup margarine or butter
1/3 cup sugar
1 tsp salt
3 tsp instant yeast
2 cups then 3 cups flour
2 eggs
2 cups warm water

Combine the first 4 ingredients and the 2 cups of flour. Beat the eggs in a measuring cup and top up with warm water until you reach the 2 cup mark. Pour over dry mixture and and add the rest of the flour 1/2 cup at a time mixing thoroughly between each addition (this activates the gluten!).
Cover and let rise in a warm place for 20 minutes. Knead the dough for a little bit and divide it into 4 equal parts. Roll each part out on a floured surface(you may need to sprinkle the dough itself with a bit of flour as the dough is quite sticky and the flour keeps the dough from sticking to your rolling pin.) Slice the dough with a pizza cutter as you would a pizza and roll up each piece from the wide end to the point.
Place on greased cookie sheets and cover to rise for another 20 minutes. Bake in 350F oven for about 15 minutes.

Adapted from the Duggars book but changed around to suit my needs!

This is a great idea! I'm going to try this next time I make bread.

Gluten free pumpkin muffins

These fluffy  muffins are gluten free, dairy free  and not overly sweet. The pecans on the top add a nice crunch.  You could also just omit ...
