Gluten, dairy and agg free multi grain bread


For this recipe I use Namaste all purpose flour mix OR home~made brown rice flour mix
Multi grain gluten free bread
1 cup hot water
2 tbs oil
1 3/4 cups flour mix
1/4 cup oat flour
3/4 tsp salt
1 1/4 tsp xanthan gum
4 tsp sugar
2 tsp instant yeast granules
4 tbs sunflower seeds (or could do half other seed)
2 tbs flax meal (ground up flax)
Mix the dough with an electric mixer for 3 minutes for best results. My new electric mixer has dough hooks and it only cost $20~a worthwhile investment that allows me to have good bread! I've also been known to let my bread maker do the mixing~see recipe for BASIC GLUTEN FREE BREAD for instructions for that. The xanthan gum NEEDS time to set in...therefore proper mixing is important.
Place in a greased mini loaf pan (smaller than a regular loaf pan) and with wet hands smooth the top nice and round. Let rise for about an hour...until loaf is really tall!
Bake at 350 for about 30~35 min. Cool on wire rack.
