One of our favorite meals is crock pot ribs. Recently I made a gluten free version for myself in my mini crock pot. I had the big cock pot cooking the family meal while the little crock pot was making mine:)
Gluten free crock pot ribs:
1 cup brown sugar
2 tbs corn starch
1/8 cup vinegar
1/8 cup ketchup
1/2 tsp ground ginger
1 tsp salt
1/4 tsp black pepper
1 lb pork ribs
Mix sugar and starch in a sauce pan then add all ingredients except for the meat. Bring to a boil. Place cut up ribs in your little crock pot then pour sauce over top. Mix it all up, cover and cook on low until dinner time:) Serve over rice, mashed potatoes or pasta.
The days have been full around here. The weather is chilly and today I put thick tights on the little girls to go to church! I can't believe I'm doing that in July!!!!
Potty training is going splendid...baby girl is training herself...it's so fun to watch how independent she is and just goes on the potty whenever she needs to. Today she did have an accident though and cried:) She was all happy when she had success afterwards and said "see mom!":)
