Cocoa biscuit rolls

This was a huge hit at my house. It's fairly quick and fairly cheap requiring no eggs for preparation! It's also a no yeast dough yet still can be prepared in the bread machine!


Cocoa Biscuits
Ingredients:

  • 1 1/2 cups buttermilk or substitute
  • 1/2 cup oil
  • 2 tsp salt
  • 1/2 cup sugar
  • 4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
Method:
Place in your bread machine in order listed and prepare on "dough" setting. There is no need to let it run the full cycle as this dough does NOT need to rise! So just remove your dough once it's thoroughly kneaded. Roll out your dough (I divide it in 4 portions to make it more manageable) nice and thin and top with a generous spreading of margarine and sprinkle with a generous amount of sweetened cocoa powder and additional sugar. Roll up as if making cinnamon rolls, only make thinner rolls as below.
Then cut up into 1 inch pieces. Place pieces on a greased cookie sheet slightly touching each other.
Bake in 350F oven for roughly 20 minutes.

For an added touch melt 3/4 cup of chocolate chips with a few tablespoons of milk adding milk to adjust the thinckness of the mixture and drizzle on top of your baked cocoa biscuits.(not pictured) Enjoy!!

Gluten free pumpkin muffins

These fluffy  muffins are gluten free, dairy free  and not overly sweet. The pecans on the top add a nice crunch.  You could also just omit ...
