Someone requested my scalloped potatoes recipe. I make it so simple...no recipe needed really:)
Just slice a bunch of potatoes thinly (peeled or not...doesn't matter...I've made it both ways) then layer them into a greased baking pan such as a 9x13. Ten I sprinkle this with spices such as salt, pepper, garlic and drizzle with dried parsley flakes. I mix the spices all up with the potatoes real good and then top with a generous layer of cheddar or mixed cheese. Lastly I drizzle about 1/2 cup of whipping cream all over the top, cover and bake covered until the potatoes are tender. Then I remove the cover and broil on low until the cheese looks done.
That's it! It's so good and really low fuss to make!

Nice post. The veggies do lok pretty. My littlest devour tomatoes too. I was inspired recently by you , and have been working hard to create meals that are much more costly. 15 bean soup for example, with fresh bread is wonderful and I think cost about 30 cents a person. Honey baked lentils, navy beans, red beans and rice all do wonders on the budget. So, thanks for the inspiration. We could really use extra money and this is one way to save.
School lunches are a problem. We get discount bread at a local store so that helps. Egg salad for us is cheap thanks to owning chickens, but when eggs are a dollar in the store I buy about 15 dozen at a time. They are great in lunches. I make muffins alot to thanks to your tips.
Your scalloped potatoes sound so easy! I always make the white sauce with butter, flour, and milk and milk. Isn't it nice to have cooler days to bake and make oven dinners without worrying about heating up the house? I am looking forward to seeing the new family pictures!

I love your rambles too. =) I think I'm going to try those potatoes....but of COURSE I have one who doesn't like cheese, ha ha. She is 11 and always expects me to make one little corner with no cheese, just for her. I think it's hilarious (okay, keeping it real...it's not hilarious to me ALL the time) that she thinks she's so special that of course I'll make different entree's just for her. I think it's the oldest syndrome shining through.
I thought of you today, because I am feeding all of the machines in my house that can go on autopilot by themselves. I have the dishwasher merrily washing my dishes, the washer/dryer singing in unison, the bread machine making some yummy oat bread for dinner, and the crockpot is cooking up a HUGE 4.5 slab of ribs I got from the food bank a long time ago.
It feels good to have them all fed - I think that word is so funny, I think of you every time because you're the one who first said it on your blog. It makes it kind of fun, better than a boring job. Now I just have to go feed the kids' clean baskets of clothing out of my big pile of clean laundry on the couch, lol!
What are the lunch kits you're talking about? The school my kids go to this year does not ever cook lunches, so it's been interesting for me to have to make them every single day, no exceptions. At their old school I usually let them have one day per week of lunches.
But....they have peanut butter and jelly every single day! I'd love to hear some different ideas too. The only thing is, some kids like tuna, some hate it, some like eggs, some HATE eggs...so it can be kind of daunting to make a different lunch for each one. PB&J is the only thing they ALL like and never complain about.
I have 4 eating lunches this year...so the amount that you make, gets me up and out of my pity party REAL quick. =)
