Ingredients:
~deboned chicken thighs (cheaper and more moist) or chicken breast pieces
~fine bread crumbs
~flour
~about 4-5 eggs(or less if you don't need to make as much food as me:)
~salt and pepper
~oil (enough for deep frying)
Method:
Sprinkle both sides of your chicken with salt and pepper and set aside.
Then pour a generous amount of flour and breadcrumbs into separate bags and beat your eggs in a bowl.
Next coat your chicken in the following order:
~ flour first(thin coat on all sides)
~then dip all sides into the beaten eggs
~ then coat with breadcrumbs.
While you do this you can preheat your oil in a pan and until its quite warm(Not so hot that your pan will explode when you put your meat in though:), this happened to me before in my early years of cooking! The oil ended up on the ceiling!! HA HA).
When your oil is ready, place your meat in the pan and fry one side at a time. I usually do this on medium~ low. If you fry them too fast you'll get a crispy outside but a RAW inside so you don't want to do that! If you fry them too slow your outside will be soggy....definitely not yum! So adjust the temperature according to how hot your stove gets!
No one complained about this dinner.......not even the littles:) Enjoy!
