This is my sister in laws recipe and we all enjoy it very much!! I like this recipe because its a mix between a brownie and a chocolate cake and it has a mild coffee flavour!!:) It's also fabulously easy to throw together and turns out right every single time!!! This makes a nice big batch using a pan one size bigger than a 9x13. As you can see in the picture below I just used a roasting pan!!! You do NOT need fancy cookware to make delicious things!!
Texas Brownies
Ingredients:
~1/2 cup butter
~1/2 cup oil
~1 cup coffee
~1/4 cup dark, unsweetened cocoa
~1/2 cup milk with 2 tbs lemon juice or 1/2 cup butter milk
~2 eggs
~1 tsp vanilla
~2 cups flour
~2 cups sugar
~1 tsp baking soda
Frosting:
~1/2 cup margarine
~1/4 cup milk
~2 tbs unsweetened, dark cocoa
~1tsp vanilla
~3 cups icing sugar
Method:
Boil the first 4 ingredients in a saucepan stirring until all is melted. In a separate bowl combine the next 3 ingredients and add you melted mixture to it and mix. Then add your last 3 ingredients and mix well until the batter is somewhat smooth. Pour into a greased pan(one size bigger than a 9x13) and bake in a preheated 350F oven for about 18-20 minutes.
While your Texas brownies are baking you can begin to make your frosting!
In a saucepan combine the first 3 ingredients of the frosting and bring to a boil stirring until your mixture is melted. Then remove from heat and stir in your vanilla then you icing sugar a bit at a time until you get a nice smooth mixture. Pour this over top of your baked, hot Texas brownies.
Let it all cool in your pan thoroughly before serving. Tastes best after overnight refrigeration (cover with plastic wrap AFTER totally cool to avoid drying out over night)
