~A special way to prepare chicken for a festive meal~


This recipe is an easy yet festive dish you can make to compliment your Christmas table!!

This is a recipe created by Chef Alexandro~ The chef I turn into when am feeling silly and the kids are watching me cook:) Chef Alexandro has a long history:)
Chicken a la Chef Alexandro
1 1/2 kg of chicken breast (I used the seasoned chicken breast you buy frozen in a box)
2 cups of flour
olive oil for frying
1 onion diced (I used a regular onion but a red onion would be more festive!)
1 red pepper diced
1 can of sliced mushrooms drained (I made mine without as almost all my kids hate mushrooms!)
3 tbs butter
1/2 cup wine ( I used white but red would probably be just as good)
2 tsp oregano
salt to taste
garlic powder to taste
1 cup whipping cream (The non whipped straight whipping cream that comes in a carton)
*Thaw chicken breast half way and cut into medium thick strips then allow to finish thawing. (It's easier to cut meat half thawed!)
*Place the flour in a large Ziploc bag and coat each piece of chicken with flour by shaking the pieces in the bag of flour. (I did not sprinkle the meat with salt as the meat I used were seasoned in the package)
*Fry each piece of meat in shallow oil (just enough oil to brown the meat not deep fry!) until browned on all sides.
*Place browned meat in a baking dish and stick into a 325F oven to keep warm and crispy.
*Melt the butter in the same pan you used for frying the meat and gently fry the onions and peppers (and the mushrooms if you are using them)
*Add wine, oregano, salt and garlic powder and let simmer for a few minutes
*Mix in the cream and bring to a boil
*Pour over the meat waiting in the oven and serve!!
Enjoy with mashed potatoes, nugget potatoes, roast potatoes, rice, or pasta
