Lentil casserole


Here is a quick and easy casserole that is all vegetarian!

Cook 1 tbs dry lentils per person with some onions, salt pepper, garlic and paprika covered in water until lentils are tender. (May need to add more water during cooking as lentils tend to absorb a lot of water) In the meantime cook enough pasta of your choice that will feed your family, drain and pour into a baking pan (9x13 is good) Chop up one red pepper and mix into pasta. when lentils are tender pour the whole thing into your pan of pasta and peppers and mix well. Then pour some cheese sauce (made from a packet) or sprinkle some grated cheddar cheese on top (about 1- 1 1/2 cups worth). Stick it in the oven until all is heated through and cheese melted (if using grated cheese...which by the way tastes better it's just that I was out of cheese)
The result! The peppers are tender crisp and add a nice zing to the dish:)
warning:some of my kids didn't like this....they have issues with veggies:) but ot really is tasty!! Probably not a good "picky toddler" dish:)
