Gluten dairy and egg free sandwich buns

I made myself some sandwich buns! It was so fun (and yummy!) to eat an actual sandwich. Felt just like old times and I was full for a while for a change. (Can you tell I don't eat much bread?:)

So I ran out of my own flour mix and had my eyes on a new product at the health foods store that I've been wanting to try. It's called "perfect flour blend" by Namaste foods. So instead of investing in the different flours to make my bulk mix I spent very little and got this premixed flour. This is great for when you cannot put out a larger sum to by bulk to make the flour mix...instead you can pay less and get Namaste:) Of course in the long run this premixed flour IS more costly...but in immediate terms it's great:)
Here is my recipe using Namaste flour blend to make sandwhich buns.
Gluten free sandwich buns
3/4 cup hot water
2 tbs coconut oil
3/4 tsp salt
1 tbs sugar
1 cup Namaste perfect flour blend
1/2 tbs instant yeast granules (quick rise)
Stir the coconut oil into the hot water until melted. Add rest of ingredients and mix very very thoroughly. Divide into two extra large muffin forms. Smooth and make tops round with a spoon then cover and let rise about 1hr. Bake in 350F oven for about 25-30 minutes.

Gluten free pumpkin muffins

These fluffy  muffins are gluten free, dairy free  and not overly sweet. The pecans on the top add a nice crunch.  You could also just omit ...
