Lemon Poppyseed Muffins

Lemon poppyseed muffins:

Ingredients:

2 eggs
1/2 cup melted butter
3 cups milk
lemon zest (of 1 large lemon)
lemon juice (juice of same lemon)
1/2 teaspoon lemon extract (optional)
1 1/4 cup sugar
6 tablespoons poppy seeds
4 cups flour
1 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon salt

Method:

Mix in the way you would any other muffin recipe but mix the lemon juice into the milk before adding it to your mixture!

Bake at 350 for 15-20 min depending on your oven....I find all ovens are slightly different!
