~Let it snow! and hen soup recipe~

And now for the recipe of the day....

A repost of an old post:) You'll notice this especially in the picture where Austin is in the highchair! He was so little back when I originally wrote this post! Now he's a strapping 5 year old!!:):) And 2 little sisters have used that same highchair since! Where does the time go? Things like this always remind me...quite painfully actually...to make better use of the time I have with them...not just merely surviving each day.

My mom gave us some free range, organic hens amongst other things from her farm. It makes the BEST soup!! I made a big pot the other day and then I took out some of the carrots and celery and just a little of the broth and blended it up in the blender for baby girl. She really enjoyed it!














So did my 2 year old:) He asked for seconds then thirds!

In Hungary they don't tend to measure ingredients. A good cook learns to make everything by sight and taste testing. So when my mom taught me how to cook she taught me the same way.

Here is how to make it:


Hen soup:


*A big hen or 2 small ones cleaned and cut up in pieces.
*Lots of carrots
*Lots of celery
*An onion(whole)
*A red pepper cut in half
* Garlic, salt, and Vegeta to taste( an Italian seasoning mix bought at the grocery store that resembles the seasoning mix they use in Hungary)


Throw the meat in the pot with water filled to the top about 3/4 full. Bring it to a boil and let it boil on high for a few minutes while you skim off the foam that forms on the top of the soup. Then add everything else and let it come back to a boil at which point reduce the heat and simmer covered for a about two and a half hours. Serve hot with cooked soup noodles mixed in.

This is a really yummy, richly flavourful soup!!

Gluten free pumpkin muffins

These fluffy  muffins are gluten free, dairy free  and not overly sweet. The pecans on the top add a nice crunch.  You could also just omit ...
